Does anyone have a recipe that includes Sharon persimmons?

I would love a recipe for the holidays. It could be dessert or a side dish. This fruit is now in season and I’d like to something special with them.

I’ve just bought some, but don’t know whether to peel it, chop it, just eat the skin….Help please?
